Cloud Biscuits

You want to know what’s fun?…baking. Do you want to know whats even more fun?…baking for your closest friend who has traveled overseas to see you.

The first necessary component is butter… it is what seems to please us all, (that is, when we are letting food please us.)… Ahem.

Once the cold butter is cut into pieces it can then be tossed into your biscuits dry ingredients bowl.  This bowl, in particular, is very special, very old, and very, very beautiful…

Then you take a picture of your dear friend holding your 1 of 3 darling bundles of joy…how precious their meeting and cuddling was to me.

Anyone who has ever made biscuits or scones will know that this next step of pinching the butter into the flour is important and enjoyable.

Once you have finished pinching in the butter you can finish off cutting the butter in with a pastry blender, one of my favorite tools….(lots of favorites in this post)

After combining your egg and milk and pouring it in to your drys (whoops, no photo) you can then combine the dough with a fork.

 

To get the dough onto your baking sheet, you can take one of two routes, depending on your mood or company.
Once the dough has been kneaded about 20 strokes you can roll the dough out on to a well floured surface and cut the biscuits in to perfect little circles or triangles, or simply drop the sticky dough right into a muffin tin. I chose the latter.

When they’ve cooked quickly in the hot oven, plop them out into a basket lined with a little linen cloth.

Then offer it to your friend with a creamy stew, cups and cups of tea and memories. enjoy!!!

Here is the recipe, given to me from my lovely friend Katie from our days in Minneapolis.

Cloud Biscuits

2 C. flour sifted

4 tsp. baking powder

1/2 tsp. salt ( I used kosher)

1 Tbs. sugar (I used raw organic)

1/2 C. butter

1 egg

2/3 C. milk

Sift dry ingredients, cut in cool butter until coarse.  Combine egg and milk, pour in to drys and stir until dough follows fork around bowl.  Knead gently 20 strokes.  Pat into 1/2 inch and cut with biscuit cutter or pull apart and drop into muffin tin.

bake at 450 10-14 min or golden
